Fresh & Crunchy Garden Salad Recipe

Ingredients:

  • 2 cups mixed greens (lettuce, spinach, arugula)

  • 1/2 cucumber, sliced

  • 1/2 cup cherry tomatoes, halved

  • 1/4 red onion, thinly sliced

  • 1/4 cup shredded carrots

  • 1/4 cup feta cheese (optional)

  • 1/4 cup nuts or seeds (walnuts, sunflower seeds, or almonds)

Dressing:

  • 3 tbsp olive oil

  • 1 tbsp balsamic vinegar or lemon juice

  • 1 tsp Dijon mustard

  • 1/2 tsp honey (optional)

  • Salt & pepper to taste

Instructions:

  1. Wash and dry all vegetables.

  2. Use the Vegetacutter to slice the cucumber, cherry tomatoes, and red onion quickly and evenly.

  3. In a large bowl, combine mixed greens, chopped veggies, carrots, feta, and nuts/seeds.

  4. In a small bowl, whisk together olive oil, vinegar/lemon juice, Dijon mustard, honey, salt, and pepper.

  5. Drizzle dressing over the salad and toss gently to combine.

  6. Serve immediately and enjoy!
